Competition Rules

  1. Applicants must make two dishes. One dish must include products from USA Dry Peas, Lentils, and Chickpeas and the second dish must include products from U.S. Dried Beans
  2. Both dishes must be 100% plant-based (vegan)
  3. The dishes must run on the restaurant menu for two weeks before judging commences
  4. The dishes can either be a starter, main or dessert
  5. The dishes will be judged on Taste, Innovation & Sales

FAO recognizes 11 primary pulses. Dry beans, lentils, dry peas, and chickpeas, also known as garbanzo and Bengal gram, are pulses of great economic importance worldwide.

Pulses utilize soil bacteria to draw nitrogen from the air. This natural process replaces the need to add nitrogen fertilizers in pulse crops, which means pulses use half the energy inputs of other crops.
